If the dish "kallapacha"
had a sign on it, it would read, "For men only." Azerbaijani
women tend to turn up their noses at this exotic gelatinous dish
made of lamb's head and shins , which stews all night long. To
be fair, let's just say that you do have to develop a taste for
this dish to appreciate it!
Kallapacha is usually served on early wintry mornings at special
restaurants. It's often a tradition for friends to meet at the
bathhouse and after relaxing in the sauna to get out and enjoy
kallapacha with vodka. Lamb's tongue and brain may also be added
to this stew. Crushed raw garlic and vinegar often accompany
this dish. |
