Kids love sharbat,
because it is basically the juice of boiled fruit that has been
slightly sweetened with sugar. Unfortunately, this traditional
item is rapidly disappearing from Azerbaijani tables, due to
the arrival of Western beverages that are manufactured locally
and have become widely available since independence.
There are two types of sharbat. One is a lightly sweetened compote,
with a strong fruit flavor such as cherry, strawberry, raspberry,
pear, apple or plum. The second type is a concentrated fruit-based
syrup, served mostly in Southern Azerbaijan (Iran). It is diluted
with water and ice cubes and offered to guests to cool them off
on hot summer days. Mint and other herbs may also used. |
