On major holidays
like Thanksgiving or Christmas, you wouldn't be surprised to
find a huge stuffed turkey on the dining table in many countries
in the Western world. In Azerbaijan, very special occasions like
weddings, birthday parties or family gatherings merit a dish
that's equally spectacular - lavangi. Indigenous to the Lankaran-Talysh
region near the Iranian border, lavangi may be stuffed fish or
chicken.
Before the dish is cooked, it may be stuffed with rice, walnuts,
pomegranate seeds, raisins, fried onion and a variety of dried
fruit. This dish is baked in the oven and presented on a large
platter with the stuffing still intact inside. As it is rather
delicate to handle, the host typically serves each guest a portion
of the chicken or fish along with the stuffing. Though Lavangi
comprises the main entrée, various other dishes will also
be served. |
