Would you expect
to find pasta in Azerbaijan? Actually, there are numerous pasta
dishes, including khangal - small squares of dough topped with
butter, ground meat and a yogurt-garlic sauce.
Sometimes khangal is also served with fried onion and scrambled
egg, depending on one's taste.
Khangal is usually prepared during cold weather because dough
is believed to warm up the body. It's an informal main course,
one that's a special favorite for kids. An Azerbaijani would
only share khangal with family or close friends. (Count yourself
lucky if you've been included, too.) |
